Our Regional Resource Center delivers wraparound, culturally responsive services — including senior nutrition, health and wellness, housing assistance, immigration support, and workforce development — to help our community members achieve economic self-sufficiency and full integration.
Position Overview
VACCEB seeks a part-time, state-licensed Dietitian/Nutritionist to oversee menu planning, nutrition compliance, and culturally relevant food programming for our senior meal services, delivered under Alameda County's Nutrition Program. This is a remote position, requiring on-site meetings and site visits on a quarterly or as-needed basis. This is an ideal opportunity for a dietetics professional committed to equitable access to nutritious meals for low-income and immigrant seniors.
Key Responsibilities
Develop monthly menus for seniors that are culturally relevant and compliant with Alameda County Area Agency on Aging (AAA) nutrition standards.
Submit monthly menus and nutritional analysis to the AAA Senior Nutritionist at least 4 weeks prior to use, and finalize any requested revisions in a timely manner.
Serve as the primary liaison between VACCEB, County nutrition personnel, and caterers to ensure ongoing contract compliance.
Conduct regular meetings with caterers and attend all County-mandated nutrition meetings.
Assess, qualify, and inspect prospective food vendors in accordance with County requirements prior to onboarding.
Conduct quarterly reviews and on-site inspections of contracted food vendors to verify continued compliance with food safety, sanitation, and nutrition standards.
Develop an annual nutrition education plan (covering both congregate andhome-delivered participants) for submission to the AAA Senior Nutritionist by July 1 each year.
Lead or oversee at least four nutrition education sessions/workshops annually, including one focused on food safety and sanitation.
Approve all menu substitutions in advance and provide guidance on therapeutic or texture-modified diet requests in consultation with clients' healthcare providers, as needed.
Provide ongoing guidance on nutrition and dietary compliance while ensuring cultural responsiveness to the communities VACCEB serves.
Requirements
Required Qualifications
Active California state license/certification as a Registered Dietitian or Nutritionist
Demonstrated experience creating culturally relevant, regulation-compliant menus for congregate or home-delivered meal programs.
Strong written and verbal communication skills for liaising with County staff, caterers, and program leadership.
Experience designing and delivering nutrition education or workshops for older adults.
Working knowledge of nutrition compliance regulations and Older Americans Act (OAA) nutrition standards.
Sound judgment and problem-solving skills to maintain contract and dietary compliance under time constraints.
Highly Desirable
Demonstrated commitment to working with low-income, immigrant, and refugee communities, particularly Southeast Asian populations.
Background or experience in restaurant, commercial kitchen, or food facility inspection (e.g., health department inspection, HACCP auditing, ServSafe-level food safety assessment).
Proactive, self-directed work ethic with strong attention to regulatory deadlines.
Familiarity with Vietnamese or other Southeast Asian dietary traditions.
Additional Details
This is an independent contractor role (1099); VACCEB will not withhold taxes or provide benefits.
Hours are flexible and self-managed outside of required meetings and submission deadlines.
Must be available for all County-mandated nutrition meetings and adhere to the AAA menu submission timeline.
A brief transition/training period with the outgoing contractor will be provided to ensure continuity of menu cycles and County relationships.
